Pan Fried Bluegill
Each month on my website we post a new recipe. I thought I'd share this month's with you on this forum.
Pan Fried Bluegill
8 whole ready to cook bluegill
1 C vegetable oil or shortening
1 C cracker meal or all purpose flour
Score the fish. Make 2 to 3 diagonal slits on both sides of the fish.
When fish is scored and ready to fry, make sure there’s enough oil to
cover the fish. If frozen fish are used, they should be thawed with free
drain. Fish thawed in their own juices are mushy and tasteless. In a
skillet, heat oil until it bubbles. After scoring fish, season, cover with
cracker meal or flour and place in hot oil. Reduce to medium heat and
cook 3 to 5 minutes on each side. Serves 4.
